Yes you can. When you make the settings for the question, you will at the bottom under "Assign to bookings", be able to choose whether to assign the question to all booking options or just one of them.

An example: You have two booking options, one that involves serving food, another that has nothing to do with food. You want to know what allergies the people who have booked “dinner” but not those who have only booked a ticket for the conference.
